I made this to take to my mom, who loves all things fall/Apple/healthy.
Quite magically some unexpected visitors showed up just after me. She was pleased to have this pretty cake to share.
It was easy to make gluten free and it went quickly. I think I’ll make her another this weekend.

It was tasty. The towel recipe required a bit of filling in the blanks but it was worth it. 
Japanese Mochi Tea Cake
Well after the exploding chocolate cake and a horribly disappointing “magical” custard cake, I decided that I needed a fool proof cake to restart the cake quest.
When I happened across a cake recipe in my zojirushi bread maker’s cookbook, it seemed perfect. All I had to do was measure and let the bread machine do the rest.
So I made a tea date with a friend, forcing a deadline, and here we are. Certainly worth making again. And my faith in cake is starting to be refreshed.
