Swedish Birthday Cake (13)

Ok so this spongy cake turned out a bit messy but with layers of cake, meringue, and whipped cream on repeat that’s to be expected. 

We celebrated my Cousin Joy’s birthday today and as soon as he saw this delight, my Grandpa recognized it as the type of cake his mom made for all of their birthdays. 
  

Potato Cake (#12)

I am excited for a new Swedish cookbook, The Art of Fika, about cakes, cookies, and all things coffee break. 

I asked my Grandpa to make all the recipes that he wanted me to try. It turns out I should’ve asked which ones to avoid because nearly every recipe was marked.

Not wanting to waste any time, I started straight away on a potato cake that calls for leftover mashed potatoes. As you can see, this simple cake was a crowd pleaser as I barely had time to get a shot.
